Healthy Chocolate Muffins
A healthy version of chocolate muffins made with cottage cheese and almond flour for added protein and nutrients.
INGREDIENTS
2 eggs
100g cottage cheese
2 tbsp melted coconut oil
1 tbsp coconut sugar
1/2 cup of almond flour
1/2 cup of self raising flour
1 tsp baking powder
2 tbsp cacao
1/3 cup of dark chocolate chips
METHOD
1) whisk the eggs then stir in the cottage cheese, coconut sugar and coconut oil.
2) sieve in the self raising flour and baking powder then add the almond flour and cacao and fold through.
3) add the chocolate chips and briefly fold in to combine.
4) divide into 6 muffin cases
4) bake at 180 degrees C (fan) for 15mins
