Peach & Burrata Salad
This salad truly tastes like summer on a plate. And it’s delicious. The salty burrata and sweet peaches make the ultimate summer salad. Actual quote from my husband “this is one of the most delicious things I’ve ever eaten, I would pay £30 for that in a restaurant”. Praise indeed!
Peaches are in season in the UK is usually from June to September, with the peak in August. Try to get British peaches if you can as they will be more nutritious having travelled fewer miles.

INGREDIENTS (serves one)
1 peach, sliced and griddled
1 small ball of burrata
2/3 small tomatoes
1 large handful of rocket leaves
1 small handful of basil leaves
Olive oil, balsamic vinegar and salt
METHOD
In a bowl, drizzle around a tablespoon of olive oil over the rocket, add half a tsp of sea salt and mix. Lay the rocket out on a large plate. Slice the peach into 8 wedges and griddle for a couple of minutes either side until just charred. Slice the tomaotoes and lay out on the plate then add the peaches, basil leaves and finally add the burrata to the middle. Drizzle with balsamic vinegar. I also added pine nuts to mine but that was after I’d taken the photo!
